Norvolk (Northern people) is my friend Carla Visch’s beautiful Swedish bakery and cafe, in Scheveningen, the port area of Den Haag. I am teaching 5 classes there in November…
Please come to a series of 3 hands on fermentation classes or learn, to make sourdough breads with us, in her bakery or come, to an evening demonstration, using the best quality Japanese Wholefood ingredients and then we will sit to eat a delicious dinner together and share a glass of sake.

NOV 8 | SPARKLE & FIZZ
Come at 6pm for a warming bowl of soup and a chunk of freshly baked bread
Class from at 6.30pm – 9.30pm
These naturally brewed drinks, will ensure you have festive, low or no alcohol drinks, to celebrate the season.
We will employ Jun, Water Kefir and Whey along with a variety of spices, to ensure you can celebrate the season, in good cheer.

Learn to ferment a range of seasonal vegetables into bright colours, flavours and textures to adorn your table this Christmas. ⠀

Heirloom cultures, for dairy kefir, filmjölk and yoghurt offer us more robust, diverse, beneficial microbes and happen to be the most delightful additions to breakfasts, lunches, dinners and a snack.

NOV 17 | A JAPANESE WHOLEFOODS COOKING CLASS & DINNER
FRIDAY NOVEMBER 17TH
6pm -10pm
This class demonstrates that if you find and use the very best seasonal produce and traditionally made
Japanese wholefood ingredients, making a fantastic meal is not only rewarding fun but not hard to do.
When the food is made we will sit together, to eat, drink and be merry!

NOV 21 | SOURDOUGH MAGIC IN THE LOWLANDS
TUESDAY NOVEMBER 21ST
10am – 3pm
Spend a day with Carla and Holly, learning how to make and bake a range of desirable, digestible sourdough goodies.
Imagine your Christmas table with breads you made, to rip and tear with friends and family!
Go home after eating a warming lunch, with a little sourdough starter, recipes, notes and the dough you make in class; to raise and bake that day or the next.
We will teach you all you need to know to capture and maintain a sourdough starter and put it to many brilliant uses. Number is limited to 12

My classes are informed by the wisdom, traditions and principles of societies diets prior to industrialisation and my background in macrobiotic principles.
Come to class if you would like:

- to align with the wisdom of societies prior to industrialisation
- to expand your understanding of seasonal wholefood ingredients, including the use of traditional fats, sea vegetables, nuts, seeds, grains, legumes, natural fermentation, sourdough leaven and much more
- to learn where to source the best quality sustainable foods
- to develop skills that will provide you with satisfying meals offering maximum nutrients in a form that is easiest to digest

Classes are kept small so you are able to get the most from them, so to be sure of your place – please book early.
Bookings can be made online by clicking the image of the classes.
Payment in full secures your booking.
Please arrive prior to class; there is a lot to cover and it works best for everyone when classes start and end on time. That said, you might like to allow an extra 15 minutes for any overrun.
Cancellation Policy
If you are unable to attend the class, in some cases, with at least 72 hours notice – to allow time for your place to be filled, a credit for any other class of the same value may be given, this is subject to availability. Or, please let us know 24 hours prior to class who will attend in your place.
If the class does not fill, 3 days notice will be given and you can choose to attend a future class or have your payment refunded in full.
Refunds can take up to 10 business days to come through to the card or account you paid with.

Nourishing, educational, fun, delicious and full of heart! Holly’s down-to-earth approach combined with her passion, deep knowledge, care and expertise make this the one of the best cooking classes I’ve experienced. It’s one thing to follow a strict recipe and quite another to understand the principles and practices that allow you to really ‘own’ how to prepare healthy delicious food. The way Holly teaches allows you to understand enough so you can adapt and experiment using available ingredients.
